INGREDIENTS
250g plain flour
½ tsp baking powder
½ tsp bicarbonate soda
½ tsp salt
480ml buttermilk
2 eggs
40g melted butter
2 tbsp caster sugar
1 shallot finely diced
1 garlic clove finely diced
3 rashers smoked bacon
80ml strong coffee
50ml spiced rum
1 tbsp Worcestershire sauce
4 tbsp dark brown sugar

RECIPE
To make the jam, add the bacon to a frying pan and colour until golden brown , add the shallot and garlic.
Once the shallots and garlic have softened add the rum and coffee
Reduce by a third then add the Sugar and Worcestershire
Reduce until slightly sticky and set aside
For the pancakes mix the wet ingredients together with a whisk, then fold in the dry ingredients more carefully but combining fully. Set aside for 20 mins before cooking
Heat a frying and rub with a small amount of oil add a ladle of mix and allow the pancake to form don’t spread the batter out so they stay thicker.
When bubbles form on the top they are ready to flip.
Repeat the process until all pancakes all cooked and ready to serve.
Slut it up to the max with an extra knob of butter before adding the bacon jam
