INGREDIENTS
400g ground pork
1/2 cup light soy sauce
10 cloves garlic, mashed or finely minced
1 Tbsp freshly ground black pepper
5 large cucumbers, (the thick kind)peeled, ends NOT trimmed
3 chicken bouillon cubes or equivalent amount of homemade or store bought stock
¼ cup thinly sliced spring onions
2 thinly sliced Thai chili
SUMMARY
This recipe sounds really fucking weird but it tastes awesome. How do you slut up cucumber? By stuffing it with pork and then boiling in a stock.
RECIPE
Combine pork, soy sauce, garlic, and pepper.
Halve the cucumbers crosswise. Using an apple or tomato corer, hollow out the cucumbers so each of them becomes a hollow tube with a solid end.
Pack each tube with the pork mixture.
In a large soup pot, combine 12 cups water and the bouillon cubes or cartons of stock and bring to a boil over high heat.
Add the stuffed cucumbers, reduce the heat, and simmer for 45 minutes.
Transfer cucumbers and some of the broth to bowls.
Serve with sliced Thai chili and scallions on top.
A great family style meal that is surprisingly f*cking epic.
